Doris & Ed’s Re-Opens in 2009 with a Flurry of Changes– A New Chef and Retooled Menu

Doris and EdsJim Filip, owner of Doris & Ed’s, Highlands, is shaking up New Jersey’s culinary world with a 2009 re-opening that includes bright new changes at his award-winning seafood restaurant: A new chef and a new retooled menu.

Filip is pleased to announce that James Corona has joined the Doris & Ed’s team as its new executive chef. Chef Corona arrives at Doris & Ed’s with a well-established culinary pedigree.

His past reigns – at Sogno and Thyme Square, both Red Bank, and Verdigre in New Brunswick - garnered those restaurants numerous stars and glowing reviews from food critics. Along the way, Corona has gained a reputation for creating imaginative interpretations of classic dishes that also remain true to the ingredients’ inherent qualities.

Chef Corona’s arrival at Doris & Ed’s represents the perfect pairing of culinary professionals: Filip is also well-known for his commitment to the finest ingredients, for his James Beard Award-winning menu, and for offering a wine list recognized with a Wine Spectator Award.
Already, Chef Corona’s Mediterranean sensibilities and Asian touches are evident on the Doris & Ed’s retooled menu.

And while there are many changes, the new menu continues Doris & Ed’s focus on seafood and prime meats. Additionally, Chef Corona’s wine-loving followers can expect his same award-winning creative and daring, yet wine-friendly dishes like Exotic Spice Seared Tuna, White Bean Hummus, Flat Bread and Black Olive Pesto ($14) or Swordfish Putanesca, Stewed Tomato, Calamata Olives, Capers, Golden Raisins, Toasted Couscous ($32).

And loyal fans of Doris & Ed’s can still count on their menu favorites, like the classic Manhattan Clam Chowder ($4.75), Lobster Bisque ($8.75) and Sautéed Red Snapper with Tomatoes and Shrimp ($34). Doris & Ed’s also continues to carry many traditional dishes like several varieties of opened-to-order oysters ($2.75), Steamers for Two ($19.75) and Doris & Ed’s Platter filled with ½ Lobster, Fried Shrimp, Scallops, Clams, Filet of Flounder and Oysters ($30).

Chef Corona attributes his Mediterranean-inspired New American Cuisine to his global travels and his Italian father and Austrian mother. He is a graduate from Culinary Institute of America, Hyde Park, NY. He has had positions at several top-tier New York City restaurants including Bouley, Chanterelle and Po. His stages include the three Michelin starred restaurant El bulli in Spain and world-renowned Ristorante Gualtiero Marchesi, Italy. He resides in Long Branch with his wife and their children.

In the coming weeks, Chef Corona and Filip will be announcing other exciting changes taking place at Doris & Ed’s including a new Prix Fixe Menu “Three for $33”, a new “Bar Bites” Menu and “Wines By Five,” an exciting selection of value-added wines, with five selections at $25, $35 & $45.
